Tasty Tuesday: Broccoli Slaw

This salad is so quick and easy and happens to be one of our favorite salads. This is a definite MUST for the list of quick, easy things to bring to a potluck. The hardest part for me is keeping the cashews hidden away until I make the salad. Everyone here loves to munch on cashews.

Broccoli Slaw Salad

  • 1-2 pkgs. broccoli slaw (you’ll find this in the produce section near the pre-packaged salad mixes)
  • 2 c. broccoli flowerets
  • 1 c. cashews (add more if you desire; add different nuts for variety; try toasting them to bring out flavor)
  • 2 c. chow mein noodles (add more if you desire)
  • Poppyseed dressing to taste (I use one small bottle of Kraft Poppyseed dressing)

Mix and serve, waiting to add the cashews and chow mein noodles until just before serving.

One of the things that I’m determined to learn this summer is how to make my own broccoli slaw. I know that it can’t be that hard and I’d love to NOT throw those big old broccoli stems away.
