Tasty Tuesday: Christmas week

I can’t believe that Christmas week is already here. This morning I woke with just a tingle of panic. I have so much to do! The snow storm this past weekend kept me inside doing a lot of baking, so I’m feeling pretty current on that.

My thoughts now are turning to Christmas Eve and Christmas dinner. I’m still a little undecided on our Christmas eve meal, so today I’m working on organizing Christmas dinner.

This year we’ll be sharing our Christmas meal with an additional 12 or 13 good friends, so we need a LOT of food. We’re planning an extravagant feast of Mexican food. I’m in the process of developing our menu, which I’ll share with you over the next couple of days. I’m hoping to share some of the cooking with some of my guests, so  I’m assembling recipes and ideas.

For starters, we’ll be having Carnitas, Fajitas, and Chile Verde. My husband has been working on his Chile Verde recipe and it’s reaching the level of Unbelievable. Now I just need to figure out what delicious things need to accompany those great dishes.

December 23:

Today, I’m realizing just how many people I’ll be feeding over the next few days. Fortunately, my sister (my real life sister!) has posted on My Sister’s Kitchen a great collection ideas for feeding a crowd. If you’re familiar with the twinge of panic that comes when you realize how many people are counting on you for a meal, pop on over to MSK and check out Laura’s list!

December 24:

Remember that the most important thing you can do today as far as holiday food goes is shopping. I’m not a shopper and I just had to stop and laugh out loud that I actually wrote that sentence! In all seriousness, most stores will close by 6 PM tonight and won’t be open again until Saturday. That means that if your Chocolate Mousse dessert isn’t the same without whipped cream on top, be sure to get the whipped cream TODAY.
