Tasty Tuesday: Coconut Brownies

So I’m on vacation at the family cottage on Lake Michigan. Thing about this cottage is that it’s 103 years old and LIFE is all about making do with what we have. We don’t have the right pans, we don’t have room to work, we don’t have good knives, we often don’t even have the right ingredients.

And THEN there are days like today when we just HAVE  to have brownies. The more we think about it, the more we NEED brownies. But sadly, we don’t have all the ingredients we need for brownies.

Awhile back I wrote about the quintessential brownie recipe which you can find here or here, but I’ll repost the recipe for your convenience. After the recipe is my new variation (a delicious one, I might add) on our old favorite. This really illustrates how we got creative with the resources available to us.

Barb’s Best Brownies

* 4 eggs
* 2 c. sugar
* 3/4 c. oil
* 3/4 c. unsweetened cocoa powder
* 2 t. vanilla
* 1/2 t. salt
* 1 1/2 t. baking powder (NOT soda-soda turns this recipe into something icky)
* 1 1/3 c. flour

Whisk eggs and sugar together. Add oil and cocoa and mix thoroughly. Stir in vanilla, salt, baking powder and flour. Bake in a greased 9×13 pan at 350 for 20-25 minutes or until the skewer or toothpick can be inserted and comes out clean.
Now here’s my extreme vacation variation….coconut! When I looked in the cupboard, there was no oil.  But I had half a can of coconut milk in the fridge. So I substituted 2/3 c. coconut milk for the 2/3 c. oil. I chopped up half the 3.5 oz. bar of Lindt coconut white chocolate bar and stirred that in along with 3/4 c. chocolate chips.

The trick with this variation is that you have to test doneness with a toothpick and take it out even if the top looks a little goopy. This variation has a cakier texture than the regular brownie recipe does, but it is just delicious!


There was a strong coconut personality to these brownies and they were gone in an instant, or so it seemed. The thing that pleased me most was that I used what I had available and got something new and spectacular!
