Tasty Tuesday: Dave’s Fish Chowder

The last week here in the High Country has been one of unrelenting rain. I don’t think I’ve ever seen so much rain! I have the gloomy feeling that we’ll not be seeing summer temps any time before next spring. The good news, however, is that we are definitely in the middle of soup weather! My husband has been puttering in the kitchen a lot the last few weeks and he’s perfected a fabulous fish chowder recipe. This is the most delicious soup I’ve had in years! It’s also pretty straightforward and doesn’t take all that long to put together.

Dave’s Fish Chowder

  • 4 cups seafood stock (you can substitute chicken stock and clam juice, but the seafood stock is the best)
  • 2-3 lbs Fish, cubed (tilapia or cod)
  • 1 cup diced celery
  • 2 large onions, diced
  • 2 Tbsp butter
  • 3 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 8 oz sliced mushrooms (baby portabello)
  • 8 potatoes peeled and diced
  • 2 slices bacon, fried crispy and crumbled
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 2 cans evaporated milk
  • 2+ Tbsp white flour

1.       Melt butter in large stock pot

2.       Sautee onions garlic, celery, mushrooms in  pot

3.       Add stock and potatoes, simmer until potatoes are mostly cooked

4.       In a separate skillet, sautee minced garlic in olive oil; add fish; brown lightly

5.       Add fish and garlic to chowder; add condensed milk; simmer until fish is cooked

6.       Thicken if needed by pulling out one cup of broth and whisking flour into it; add back to chowder. Season with salt and pepper and crumbled bacon.

7.       Serve with oyster crackers or thick slices of Sour Dough Bread or both.

Next week Dave promised me the recipe for his Three Meat-Three Pepper Chili. It’s the most amazing set of flavors and I can’t wait to share it with you.

Last but not least, it’s Dave’s birthday today and I wanted to give a public shout-out to him with a huge Happy Birthday! He’s a great guy.

Barb Kelley.
