Tasty Tuesday: Chicken Noodle Soup From Scratch

Hi there!  This is Sarah, filling in for Barb on Tasty Tuesday! I’m going to try to live up to her high precedent for yummy food, and fresh ingredients! Barb will be back, don’t be alarmed!

This recipe I will share may seem like a little work, but I guarantee you will NEVER want to eat canned Chicken Soup again! It also freezes well, so you can make a lot at a time.

Chicken Noodle Soup From Scratch


  • 1 whole fryer chicken* (buy a bunch and freeze when they are on sale! Cheap!!)Chicken Soup
  • 1-2 onions
  • 4-6 carrots
  • minced garlic (I buy the jars of garlic in oil)
  • Italian Seasoning (optional)
  • a lot of salt
  • pepper
  • 1/2 to 3/4 bag of egg noodles**

1. Clean out the giblets from the chicken. Rinse inside and out.
2. Place the chicken in a large soup pot. Add salt. Bring to a boil. Reduce heat to Med and simmer for about 30 minutes, until the chicken is cooked.
3. Meanwhile, chop the onions and carrots. Sautee the onions, carrots, and garlic to taste.
4. Lift out the chicken with tongs and place in a large bowl. Skim any particles from the top of the broth. Return broth to the burner on low.
5. Remove chicken from the bones and skin, and cut in bite size pieces.
6. Add chicken, onions and carrots to the broth.
7. Season with as much Italian Seasoning, salt and pepper as you like, tasting along the way.
8. Add the egg noodles, and simmer until the flavors are blended. (no time limits, just taste, taste, taste) As the noodles cook and expand, you may need to add more water or a little canned broth(gasp!). Just be sure to add more salt and pepper as well.

When I made this last week, it made about 15 servings here is how much it cost:

  • Chicken: $3.00
  • Onions/Carrots: $2.00
  • Egg Noodles $1.29

Grand total: $6.29 or $.42 per serving!

*If you prefer white meat only, use 3-4 chicken breasts, on the bone
** If you are allergic to eggs, use whole wheat rotini. However, the rotini will fall apart the next day. After step 7, you may want to take smaller portions of the soup, then add the noodles. If you freeze it, add the noodles after you thaw it..
