Tasty Tuesday: Cranberry Muffins

Oh shoot. It’s NOT Monday! In fact, it’s not Tuesday either. That means it must be Wednesday and I’ve missed Tasty Tuesday altogether. I DO have an excuse….Tuesday was my 25th wedding anniversary! BUT. BUT, the truth is that I just forgot. I totally lost track of what day of the week it is. Thanksgiving just does that to me!

Today, the very last of my Thanksgiving leftovers became cranberry muffins and the very first of my Christmas baking all at the same time. Until this year, I had never heard of using leftover cranberry sauce for anything but smearing on sandwiches. Don’t get me wrong; that’s a delicious way to use up leftove cranberry sauce, but it’s hard to use a LOT of cranberry relish that way.

I was delighted to discover the idea of  recycling the cranberry relish into muffins. I tried it today and it was GREAT.

I combined several different recipes and came up with this:

Cranberry Relish Muffins

Stir together:

  • 1 c. all purpose flour
  • 1/2 c. whole wheat flour
  • 1 cup oatmeal
  • 1/4 c. oat bran (optional)
  • 1 T. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1/4 t. ground cardamom (optional)
  • 1 egg (use two if you’re using small or medium eggs)
  • 1/2 c. milk
  • 1/4 c. oil
  • 1/4 c. applesauce
  • 1 1/2 c. cranberry relish/sauce

Mix completely but don’t overmix.

Pour into muffin papers in a muffin tin and bake at 400° for about 20 minutes or until an inserted toothpick comes out clean.

Here’s how a different cook used leftover cranberry relish to make muffins. Two Peas and their Pod use a slightly different method for muffins and these look really good.

This is the first post in our new December Series over at My Sister’s Kitchen called, “I’ll Just Have a Bite of Yours.” This refers to a line that gets thrown around a lot in our house when it comes to sampling delicious food. For instance, if I’m out to dinner with my wonderful husband, he might order a dessert and I will say, “I don’t need dessert, I’ll just have a bite of yours!
